All catering businesses have a legal responsibility to train their staff in matters of food hygiene and Food Safety in order to prevent a possible outbreak instead of reacting on one. A high standard of food safety protects consumers’ health and helps to maintain the reputation of the business. The certification of your staff would also be beneficial for health and safety audits.

This short and theory-based learning programme in Food Safety in Catering teaches candidates,

  • Food Service Personnel and Catering staff:

  • Employer & Employee responsibilities toward Food

  • Hygiene and Food Safety Legislation

  • Basics of the Food Safety Law

  • Personal, Uniform and Work surface Hygiene

  • The establishing and Implementation of Standard Operating Procedures (SOP’s) for maintaining a hygienic work environment

  • Cleaning and Disinfection

  • Identifying potential Food Safety hazards (Physical, Microbial, Allergenic and Chemical) and possible risk in controlling them

  • Spoilage vs Food Poisoning and Cross-Contamination

  • Layout of Food Premises, Pest infestation & –control

  • 7-Principles of the HACCP Food Management System during the Catering Cycle

  • NO food or liquor may leave the premises.

  • NO outside beverages are allowed.

  • NO refunds will be allowed, should the show be cancelled for a reason beyond our control, a voucher may be issued which can be used toward a next show, function or class by the HCI.
